Potato Salad

This potato salad is so good, I literally had a friend eating it directly out of the salad bowl with a salad spoon and had three advanced requests to make it again. That said, it is absolutely terrible for your waistline!!!


Serves 4

2kg baby potatoes, washed
4 eggs, hard boiled, quartered
12 slices bacon, diced
3 spring onions, green parts only, finely sliced
½ tsp paprika
½ tp ground coriander
½ cup fresh parsley, roughly chopped

½ cup mayonnaise
3 Tbsp white vinegar
2 Tbsp white sugar
½ tsp celery salt

Boil potatoes until cooked, then slice into bite-sized pieces. Over a medium heat, cook bacon together with paprika and coriander until crispy. Once cooked, transfer bacon to a plate with paper towel to absorb excess fat.

In a small bowl, combine mayonnaise, white vinegar, sugar and celery salt.


Combine cooked potatoes, eggs, bacon, spring onions, parsley and dressing in a bowl. Toss just before serving.
