No Bread Baby Burritos

So delicious, you won't miss the bread.


Serves 4


Tomato Rice
2 cups basmati rice, uncooked
2 cups chicken stock (onion free for fodmappers)
3 spring onions, green parts only, finely sliced
1 can diced tomatoes
1 Tbsp tomato paste
1 jalapeno, minced
3 Tbsp garlic oil*
1/2 bunch coriander

Preheat oven to 180C. Place rice in large mesh strainer and run under cold water until the water runs completely clear. This will help make the rice fluffy.

Using a large pot (suitable for stove and oven), heat garlic oil over medium heat. Once the oil is hot, add basmati rice and cook for 2-3 minutes or until translucent and slightly golden. Add broth, canned tomato, tomato paste, spring onion and jalapeno. Cover the pot and bring to a simmer.

Once simmering, transfer the pot to the oven and bake for 30 minutes. At about the 15 minute mark, stir the rice through. After 30 minutes, the rice should be cooked. Remove from oven and stir through coriander.


Meat
400g beef steak, sliced into strips
2 Tbsp ground cumin
1 Tbsp ground coriander
Pinch of salt

Combine oil, cumin, coriander, paprika and salt in a bowl. Cover beef in sauce and marinade for 30 minutes (although longer is better). Heat a frypan to hot heat and fry beef quickly until almost completely cooked. Remove from heat and let rest for a few minutes before serving.



Salsa
Make this first and let it sit for a while so that the flavours can develop

1 tomato, diced
2 spring onions, green parts only, finely sliced
2 Tbsp fresh corander, finely chopped**
2 Tbsp fresh basil, finely chopped
1 lime, juiced
30ml Olive oil
Pinch of salt

Chop all the things and combine in a glass or jar. Mix well and set aside in the fridge until use.


The Rest
Leave your dignity at the door, this is about to get messy and amazing.

Whole butter lettuce leaves, washed (about 2-3 per person)
Shaved parmesan
A lot of paper towel

Using a butter lettuce leaf, stack rice, meat, salsa and parmesan. Wrap and apply directly to your face.


* Non fodmappers should opt for fresh garlic (3 cloves, minced) plus oil. Also grate in a brown onion and add in with the tomato. Nom.
** Coriander can be substituted for parsley if not available or if you simply don't like coriander.
