Fennel Potatoes

A simple way to make amazingly delicious potatoes! I served this with steak and warmed vegetables. YUUUUUUUUUM!


Serves 2 as a side dish

8-10 baby potatoes
1 tsp fennel seeds, ground
1/2 tsp ground cumin
3 Tbsp garlic oil

Combine fennel, cumin, salt and pepper in a small bowl.

Preheat oven to 400 degrees and prepare a baking tray with baking paper. Place potatoes in a pot and cover with water and boil for 20-25 minutes or until soft. Drain water from pot, add garlic oil and replace lid back on pot. Shake the pot so that the potatoes break up a little, but generally remain whole. Remove from pot and place on a baking tray. Press down gently on each potato so that they crack open a little. Sprinkle fennel mixture on top of potatoes.

Place tray back in the oven and bake for 15 minutes or until edges become crispy.

Serve with steak and vegetables.
