Parmesan Zucchini

These are so super simple and so delicious! An easy side for any meat-and-veg dish!


Serves 4 as a side

4 medium zucchini, sliced in half*
3 Tbsp garlic oil
½ cup grated Parmesan cheese
2 Tbsp fresh thyme, chopped

Preheat oven to 180C. Place zucchini on a line baking tray. Brush zucchini halves with garlic oil, then sprinkle thyme and parmesan on top. Season with pepper.

Cook zucchini in the oven for 20 minutes, then switch to grill and cook for a further 10 minutes, or until the parmesan has a little colour.

Serve with steak and potatoes!


* The zucchini I used was fresh from someone’s garden and absolutely GIANT, so I made wedges instead.
